Where Italian knife craftsmanship has been alive for centuries
The blades of the chef’s knives are made of high-alloy steel, hand-forged, and hardened multiple times.
The convex grind, “un taglio dolce” as Andrea Berti calls it, makes the knives incredibly sharp yet robust. Berti combines them with fine woods and horn from the region.
Boxwood, olive wood, and buffalo horn are the ancient elements of knife craftsmanship in Italy. Handles made from these natural materials are soft and supple in the hand. A warm feel, depending on your taste.

The production facility in Scarperia still does not use any modern digitally controlled machines. Everything is still made by hand, just as it was when the company was founded.

Scarperia e San Piero is a picturesque medieval town in Mugello, about 30 km northeast of Florence in the region of Tuscany. The municipality consists of the two historic towns of Scarperia and San Piero a Sieve and is one of the “Borghi più belli d’Italia” – the most beautiful villages in Italy.
Scarperia is particularly well known as a traditional knife-making center and has been considered the knife capital of Italy for centuries. The first statutes governing knife-making were established here as early as the 15th century, and the manufacture of knives and cutting tools became a magnificent local craft that shaped the cultural and economic life of the town.
IThe historic Palazzo dei Vicari, the town’s central square, is now home to the Museum of Cutting Tools (Museo dei Ferri Taglienti). Here, visitors can not only trace the development of knife production over the centuries, but also see historical tools and knives from different eras. Next to the museum is an old smithy where visitors can experience the traditional manufacturing process.
The knife-making tradition of Scarperia extends far beyond simple tools: it represents a combination of craftsmanship, regional identity, and centuries of experience, which is still cultivated today by a small number of highly skilled knife makers.
