As well as sharing our personal impressions, we also compare the Tormek T-1 with traditional whetstones and other knife sharpeners. We were particularly keen to find out how high-quality and DLC-coated knives perform when sharpened on the new diamond wheel.
The Tormek T1 – The Swedish Way of Knife Sharpening
My journey from Stockholm to TYPEMYKNIFE
My name is Thomas Raschke and I’m going to tell you a bit about Sweden, Thormek and knife-making. Before I founded the company TYPEMYKNIFE with Claus Ermlich, I lived in Sweden for many years.
In Stockholm, I worked as a master goldsmith and completed a knife-making course at the local folkhögskola. For many years, I was a member of the Stockholm Knife Makers’ Association. For us knife makers, Tormek is as well-known as Bosch or IKEA are in Germany. Everyone is familiar with those handy little knife sharpeners. No knife maker’s workshop is complete without a Tormek. This manufacturer’s machines are so popular because there are no comparable machines on the market in terms of function and quality. But more on that later.
Our experience with the Tormek T1 at the Ambiente trade show in Frankfurt
At Ambiente in Frankfurt, the most important trade fair for knife manufacturers, we came across the Tormek stand. It immediately felt like coming home to me. I had to go and speak to one of the friendly staff straight away – in Swedish, of course, since I had the chance.
The conversation turned to Lindesberg, the lovely town where Tormek has been manufacturing sharpening aids since 1973. It is idyllically situated near Örebro, not far from Stockholm. The conversation continued; we introduced our company and showed them all the little knife-sharpening marvels we had developed over the past few years. There was an immediate mutual interest. We parted on the understanding that we would get in touch again after the trade fair.

Unpacking
When the plain white cardboard box arrived, we were already really excited. We were finally going to hold in our hands something we’d only seen in pictures until then. Upon opening it, we found another green box inside, which surprised us with the message ‘Try this at home’. As we took out the inner box, we were amazed at how heavy and sturdy the package was.
When we opened the lid, we were greeted by a colourful assortment of interesting paper items: a beautifully illustrated quick start guide, the manual and the warranty certificate. There was also a sticker bearing the slogan ‘Try this at home’ in a 1960s style. Almost Japanese in appearance, a small paper folder lay beside it, containing – in keeping with the company’s tradition – plasters for the worst-case scenario. Last but not least, we found sturdy cardboard cases for transporting and storing blunt or freshly sharpened knives.
And then, at long last, the object of my desire: the Tormek T-1 in Carbon Black.
Visual inspection and hygiene standards
This compact appliance is available in four colours and blends in perfectly with any kitchen décor.
One striking feature of this new, compact food processor is the way it simplifies several processes. Its traditional predecessors had a grinding disc that ran in a water bath. The disc used for deburring was covered in leather and coated with grinding paste. The new design prevents water splashes and the build-up of grinding paste and steel particles in the workplace. This makes the machine perfectly suitable for use in the kitchen.
Tormek focuses on dry sharpening and deburring. The whetstone has been replaced by an innovative bevelled diamond disc. The leather disc has now been replaced by a conical honing disc made of composite material. An additional tool on the side allows the angle to be adjusted from eight to twenty-two degrees – for the perfect edge on your kitchen knife. The knife guide can hold knives up to 60 millimetres wide at a fixed angle.
We have the T1 in the ‘Carbon Black’ finish in front of us. It looks very stylish and – something we consider particularly important – very hygienic too. There is no sign of steel shavings, wear and tear or a workshop feel. Nevertheless, the body is made of solid cast metal and feels heavy and sturdy. Everything about the machine gives the impression of technical perfection.
A surprising feature is the wooden handle, which makes the machine portable. Despite its otherwise high-tech appearance, it goes perfectly with wooden worktops, chopping boards or knife blocks and blends harmoniously into the overall kitchen décor.
Working with the Tormek T1 – Quiet, precise, and easy
When switched on – which, to be honest, didn’t surprise me – the machine is incredibly quiet and vibration-free. As with its predecessors, this is a real hallmark of Tormek.
Fitting the blades is easy and the functions are self-explanatory. Inexperienced users may find it takes a bit of getting used to having to turn the machine over to sharpen the other side of the blade. However, this is no problem at all, as the machine is small and easy to handle.
As with all knives that you sharpen, you must ensure that you sharpen from the base or bolster of the knife right through to the tip. We also tried sharpening black DLC-coated knives from our Black Diamond Cut series. Although the coating is harder and more durable than stainless steel, the result was very good.
At first, the finish seemed a little rough to us. However, once the grinding is complete, you switch to the composite honing disc. Although it does cause some abrasion, the result is more than impressive. The disc removes burrs and polishes superbly. Normally, the polishing stage takes longer than sharpening the blade. Here, however, a very good result was visible very quickly. The debris from the polishing disc is dry and can be easily swept off the work surface.
After a few grinding passes, you should clear the magnet of any swarf. To do this, you need to remove the angle holder and then reattach it. This requires a bit of dexterity, but it’s quite straightforward.
Comparison with other sanders
The Tormek T1 combines the advantages of two sharpening methods. Like a traditional whetstone, it is always ready for use in the kitchen and delivers excellent results in no time. At the same time, like a professional sharpening machine, it maintains a consistent sharpening angle along the entire length of the knife and reliably polishes the cutting edge.
A food processor like this is, of course, a bit more expensive. However, when you consider the time saved, the convenience of having it ready to use, and above all the precision of the results, it’s certainly not too much to spend. In the long run, this investment is definitely worth it.
Conclusion – Why the Tormek T-1 is a must-have for every kitchen
The machine is so quiet that we completely forgot to switch it off again.
It is the perfect weight, sits firmly on the kitchen worktop, yet is easy to lift and turn.
The whole process is straightforward, and the sanding results are absolutely impressive.
Grinding dust and shavings are much easier to remove than when maintaining a traditional whetstone or roller sharpener.
An eight-year warranty is impressive.
Personally, I would have liked to be able to swap the diamond disc for one with a finer grit. Perhaps Tormek will expand its range to include this in future.
Although the machine is very stylish and a real eye-catcher, you can cover it with a fabric cover, available in blue.
Not quite our style – we grew up wearing denim. We think a more neutral version would be cooler.
Recommendation
We are convinced that this little electric grinder deserves a permanent place in the kitchen. It has a typically Scandinavian design – highly aesthetic, functional and appealing.
The value for money is also absolutely impressive, given the low-wear components and the eight-year warranty.
