When this trip also includes an extravagant event in the style of an exquisite meat sommelier breakfast, paired with culinary finesse, the impression is perfect. A platter full of the finest homemade dried Bündnerfleisch and a tasting of his exquisite white sausages made from beef are unforgettable.
Of course, the first step is to try to understand the customer’s wishes. We always try to incorporate the customer’s ideas into our design considerations.

An engraved kitchen knife and the reasons for personalization.
After many templates and ideas for the sound design, the end result is a simple but, in its simplicity, very interesting design.
The blades were split lengthwise into two halves. We then dipped the upper half of the cutting edge into a deep black.
In diesem Schwarz befindet sich auf der linken Klingenseite in einem 3D-Frosting-Laserverfahren der Schriftzug:
„Hinterhof Metzgerei since 2019“.
On the right side of the blade, we have laser-engraved his signature, “Michael Vogt,” as well as the limited edition number of his small series into the metal.

The technology behind laser engraving
Lasers were originally developed to apply identification markings – for example, a QR code or barcode with numbers or other symbols for industry to identify its parts.
Of course, plastics could also be lasered as development progressed. Very few people would identify the start-stop button in their car as laser technology – and yet that is what it is. It is a two-layer coating, and the familiar start symbol is simply abraded from the surface.
In a broad sense, we have also processed the blades of the backyard butchery in this way.
Laser technology in 3D perfection
We then used a 3D process to laser the lettering into this black surface. This gives the lettering an extremely vivid appearance and changes its appearance with the help of light.
A technique that can create astonishing effects when viewed and produce fascinating light reflections.
The Goyon-Chazeau forge – Michael Vogt's choice for his backyard butcher shop
During our visit, we naturally presented Michael Vogt with a selection of blades from leading European manufacturers.
Michael spent a long time carefully examining the blades available in our shop and made his selection with great care. Naturally, anyone who works with knives on a daily basis has their own specific requirements and preferences.
As expected, this was no different for Michael Vogt.
He chose a very small traditional forge in the capital of French cutlery – the town of Thiers in Auvergne.
The home of Coutellerie Goyon-Chazeau. A first-class family business. French tradition brought to life in the Le Thiers master craftsmen’s association.
During our travels, we were repeatedly amazed at the classic techniques still used today to produce knives of outstanding quality.
Pure craftsmanship—from drop forging to deburring and the initial grinding processes to handle assembly and finally to the final inspection by the charming Claudine.
The series chosen by Michael Vogt is “Le Thiers.” Classically drop-forged, with an unusual pommel and fragrant regional juniper wood fixed to the tang with a 3-rivet look.
A kitchen knife with French elegance and aesthetics. Beautifully crafted and, for the right hand, a tool that fits like a glove.
