This is a Chef's knife from Claude Dozorme from the series FlatCut, Haute Cuisine,
with a blade length of 26 cm and a handle of Bakelite black.
The knife manufacturer Dozorme began in 1902 in la Monnerie at Thiers Auvergne France their history. Blaise Dozorme was a master at handling steel and used this know-how to start a small cutlery factory.
His manual skills and entrepreneurial spirit earned him the nickname “the wolf”, which is still reflected in the company logo today. In the 1970s, Claude Dozorme took over the management of the company and invested in machines and tools to develop his own product line and achieved the Maître Artisan Coutelier d’Auvergne award.
In 1991, the daughter Claudine Dozorme took over the company, which is still family-run today. Claudine Dozorme was awarded the Order of Merit of the Legion of Honor for dynamism and creativity and still heads the factory in Thiers today.
The FlatCut knife series is a new, interesting symbiosis of functionality and design. The blade steel used is X50CRMoV15, which is hardened to 54-56 HRC. Extreme cutting precision and stability of the blade characterize the Haute Cuisine knife series.
The special thing about FlatCut is that the well-known product designer Monsieur Thomas Bastide was involved in this series. Thomas Bastide stands for the French, functional and elegant design language. Which he expresses, among other things, in the LVHM group and in the glass industry of Baccarat.
The handle material used consists of dark, almost black Bakelite, which has excellent thermal and dimensionally stable properties. The Bakelite handle scale is attached to the solid tang with three stainless steel pan head screws and glued seamlessly. The handle shell is therefore only on the right side of the blade and inspires the viewer to get interesting perspectives.
