Goyon Chazeau Le Thiers kitchen knives are fine cooking tools of French elegance. The knife manufacturer Goyon-Chazeau was founded in 1953 by husband and wife Chazeau and Goyon and is now family-owned by the third generation.
The headquarters of the manufactory is located in Thiers – La Monnerie and production is carried out there exclusively by hand, in 100% French production. The finest knives are made here for connoisseurs of exquisite cutting tools, which have received multiple awards for the highest level of craftsmanship.
The Goyon-Chazeau Manufacture has been a member of the Confrérie du Couteau Le Thiers. The blade steel used for the Le Thiers knife series consists of X 50 CrMov15 measuring steel, which is drop-forged by hand and brought to a hardness of 54-56 HRC.
The blade is finely ground using the classic Plicite process and then honed by hand in the final step. The extraordinarily long, curved bolster, which allows the knife-wielding index finger to make a safe and fine cut, is forged and connected to the continuous tang in one piece.
The handle scales made of seasoned juniper wood are fixed to the tang with two stainless steel rivets and close the bolster tightly. The juniper wood used has a different grain on each knife and is therefore unique.
