This is a Chef's knife from K-Sabatier from the series Authentique 1834 Ltd,
with a blade length of 20 cm and a handle of POM plastic-3 stainless steel rivets.

The cutlery has a history dating back to before the French Revolution.
In July 1834 Bonnet S. registered the brand as a manufacturer of cutting tools in Thiers. The manufactory enjoyed international success. It was continued by the other successors Gabriel and Pierre from 1882 with the brand name K-Sabatier.
The success of the manufactory was due to the authentic typical goiter, the pleasant grip and its balance. The knife manufacturer is now in the eighth generation of the family, under the direction of Philippe Bournilhas.
It is still in the same place in Thiers – La Monnerie Bellevue 57 and is used to this day the same traditional techniques. The knives are all drop-forged. The type of steel used is 1.4116, stainless – Z50C13 with a hardness of 55-58 HRC.
