The knives from the Manufactory Saladini in Scarperia Tuscany Italy are the finest handcrafted tools for the kitchen. The history of the knife manufacture goes back to the middle of the 19th century.
In 1841, in Scarperia, the city of Italian knife making, the Saladini family started making cutlery for the clergy. The town of Scarperia in Tuscany, between Florence and Bologna, has a tradition in blade production. History that goes back to the 15th century. This tradition was revived by Leonardo in 1984 and has been continuously developed to this day.
In 2002 Giacomo Cecchi joined the company and was responsible for the design and development of new knife shapes. Coltelleria develops professional kitchen tools suitable for everyday use as well as individual and collector’s items of the highest craftsmanship.
The blade steel used for the trade fair series Collezione Cucina consists of X46Cr13 carbon steel, which is drop-forged and hardened to 56-57 HRC is brought. The handles, made from long-stored local boxwood from the Apennines, are driven in one piece onto the barbed tang.
The solid wood handle and the blade are precisely ground and shaped by hand on belt grinding machines in multiple manual processes. The knives are finely balanced and the subtle bolster gives the user a secure feeling when cutting.
