Scarperia, located in Tuscany between Florence and Bologna, looks back on a tradition of blade production. History that goes back to the 15th century. This tradition was revived by Leonardo in 1984 and has been continuously developed to this day.
In 2002 Giacomo Cecchi joined the company and was responsible for the design and development of new knife shapes. The Saladini manufactory develops professional kitchen tools suitable for everyday use as well as individual and collector’s items of the highest craftsmanship.
The blade steel used for the trade fair series Collezione Cucina consists of X46Cr13 carbon steel, which is drop-forged and hardened to 56-57 HRC.
The handles are made of long-stored, domestic olive wood (>Video) are driven in one piece onto the barbed tang. The solid wood handle and the blade are precisely ground and shaped by hand on belt grinding machines in multiple manual processes. The knives are finely balanced and the subtle bolster gives the user a secure feeling when cutting.
The handle shape and the Olive wood are elegantly curved and nestle naturally in the hand of the wearer. Saladini`s Collezione Cucina, a beautiful and extremely individual series of knives in terms of blade shape, handle design and professional use.
