The professional usually uses the herb knife for a rocking cut technique. This type of knife is particularly suitable for cutting larger bunches of herbs. The blade is then used for chopping, especially for fine, ready-to-spread herbs. To do this, the kitchen professional takes a bush of leaves in his left hand and guides the blade along the backs of his fingers to achieve fine cuts.
Which herb knife should I choose?
If you have to constantly process larger bunches of herbs, I recommend a Berti blade, which has a long blade and a subtly curved cutting edge. The models from GÜDE, DICK and Burgvogel are ideal for smaller quantities, but are not so well suited for the chopping process. You choose the handle materials according to your taste. Plastics are more for the professional kitchen and beautiful woods for your knife board.
