This is a Boning knife from Chambriard from the series Grand Gourmet,
with a blade length of 13 cm and a handle of Juniper wood - 3 stainless steel rivets.
The Coutellerie Chambriard from Thiers, the knife capital of France, has developed a fantastic high-quality kitchen knife series, Le Thier’s Grand Gourmet.
Chambriard was first mentioned in 1880 for the manufacture of “Le taille prè” scissors. After World War I, Jules Chambriard worked for various knife manufacturers in Thiers. He assembles and develops classic Laguiole pocket knives.
In 1952, Jules’ son, André Chambriard, set up a small factory in la Montférie to make table knives. He became known for the production of monobloc knives, which soon became world famous. The company expands and increases its capacity in Celles sur Durolles, in the Thiers Mountains.
In 1980, a cutlery shop was acquired in the center of Thiers, consolidating its position. Chambriard makes the finest, classic Laguiole pocket knives and is a member of the Membre Confrérie du Couteau de THIERS association. In 2010, a chef’s knife series, Le Grands Gourmets, was developed and presented for the first time.
The series includes knives that are of excellent quality and precision craftsmanship. It is characterized by the special design of the bolster, feel and function. A SANDVIK 13 C 26 knife steel is used, which has a strong focus on hardness, sharpness and edge stability.
The steel is drop-forged, ice-hardened and thus achieves a hardness of 57-59 HRC. The handle is made from local juniper and is pressed seamlessly onto the full-length tang with 3 stainless steel rivets. The knives are honed and finely ground by hand.
The exceptionally curved bolster and the ergonomic handle give the Le Grand Gourmet series a unique design and uniqueness. A beautiful piece of craftsmanship from Thiers, the capital of French knife making in Auvergne.
