The blade steel used, which is drop-forged by hand, is X50CrMoV15 stainless steel with a particularly high carbon content.
The blade hardness achieved is in the range of 55-57 HRC with a very fine granulometry, which ensures the blade has a long-lasting cutting stability.
The hardening process is carried out in three cycles to achieve maximum hardness, toughness and the finest microstructure.
The grinding of the blade is done by hand in three phases to achieve a convex geometry.
The handle material used in this series consists of Madagascar Zebu buffalo horn. The buffalo horn must be at least 15 years old.
The age of the horn is decisive for its toughness and durability in further use as a handle for professional kitchen knives.
Each handle is therefore absolutely unique in terms of grain and colour. The classic Berti decorative rivets are attached in the middle of the handle, a quality and distinguishing feature of the manufactory.
