This is a Office knife from Coltellerie Berti from the series Coltelli da Cucina Plexiglas Rosso,
with a blade length of 11,5 cm and a handle of Red Plexiglas.
Coltellerie Berti a chef’s knife forge for over 100 years in Scarperia Florence Italy produces. Berti creates the finest blades with precision craftsmanship.
Great importance is attached to the excellent processing of various local, traditional types of wood, buffalo and other types of horn.
The blade steel used, which is drop-forged by hand, is X50CrMoV15 stainless steel with a particularly high carbon content.
The blade hardness achieved is in the range of 55-57 HRC with a very fine granulometry, which ensures the blade has a long-lasting cutting stability.
The hardening process is carried out in three cycles to achieve maximum hardness, toughness and the finest microstructure. The grinding of the blade is done by hand in three phases to achieve a convex geometry.
The handle material used consists of solid plexiglass in the color Rosso, which adapts very harmoniously to the hand with its curved shape.
The Plexiglas Rosso is pressed seamlessly onto the tang and glued. The handle scale is also adorned with a decorative rivet application, the trademark of blade smiths Berti.
Each blade is handcrafted by a coltellier and then stamped with his initials. The knives are very well balanced and, thanks to the shapely handle, lie elegantly and securely in the user’s hand.
