Burg Staufeneck

Rolf Straubinger, and his Staufeneck fine dining kitchen knife.

One of the first knives we designed for star chefs is the Rolf Straubinger knife.

The Michelin-starred chef has a marvellous residence in Staufeneck Castle near Göppingen close to Stuttgart. His creative work as a top chef is known far beyond the borders.

We met an extremely likeable old-school restaurant chef. He looks back on a long tradition of chefs and innkeepers at Staufeneck Castle in his family.

It was immediately clear to him that the picturesque castle and his creations, the food in the Michelin-starred Fine Dining restaurant, had to be on his knife.

We took photos of Staufeneck on the spot, where the castle is enthroned on the gentle hills of the Swabian Alb. We created black and white drawings with high contrast. This resulted in one side of the blade.

We designed the other with a parade of small delicacies. Results from the Michelin-starred kitchen.

Rolf chose a chef’s knife from the Italian knife manufacturer Saladini. An elegant knife with a 25 cm blade and a dark boco handle. Finally, a perfect ensemble of blade design, motif and knife.

Sven Ritzmann is The Stuttgart Scene Chef

When we met Sven Ritzmann, he was a chef at the trendy Lumen restaurant in Stuttgart. He did his apprenticeship at the former Michelin-starred Träuble in Geradstetten. He then travelled to Mallorca and Switzerland until the call came from Stuttgart. He was chef de cuisine in the plenum of the Württemberg state parliament. We had a great and imaginative conversation in the Lumen. The idea grew. To design one side of his knife with his favourite pictures. Sven Ritzmann in the kitchen, if you look at his Insta page he seems to live there. Chefs at work and the backdrop of Stuttgart, including the television tower, were very important.

The octopus is a very special creature for chefs. It’s not just the excellent flavour, the firm meat combined with the exotic, appealing appearance. It is the myth-enshrouded sea monster. It looks at you critically with its large eyes. It is one of the most intelligent sea creatures. It attacks divers and runs off the kitchen table like liquid, dripping over the edge of the table.

On the other side came the goddess of cookery, the immaculate mother of fine dinig creations. She emerges classically from the rose bush, as in medieval depictions. A little bad behaviour supported by an erotic look. You don’t clean fingernails with kitchen knives…

Benjamin Maerz

The forearm tattoo of star chef Benjamin Maerz on a GÜDE THE KNIFE

An astonishingly simple design solution was offered by Michelin-starred chef Benjamin Maerz in Bietigheim.

Benjamin and his brother Christian run the Michelin-starred restaurant Maerz und Maerz in Bietigheim near Stuttgart.

Benjamin is the chef, Christian is the sommelier and looks after the high-quality drinks.

As we sat in the beautifully designed parlour, surrounded by monkey lamps and bull heads, pondering a suitable knife motif, Benjamin rolled up the sleeve of his chef’s jacket and presented his forearm.

On it was an all-over tattoo of light and dark hexagons in a row. The perfect, personalised motif had been found.

We took photos. Then began the elaborate retouching work. The tattoo was great, but the hair, which the photo also showed, had to be removed.

Benjamin chose one of the most interesting and controversial chef’s knives on the knife market as the knife for the finished tattoo. “The Knife” from the Güde company in Solingen.

This knife is an enormous curved piece of steel. It is guided by a small handle that sits above the blade. An outstanding innovative kitchen tool.
